There are few pleasures more delicious than a cup of your favorite coffee or tea with a Poundcake done right. This cake fits the bill- light, moist, and with a perfect balance of airiness and density, it has the perfect crumb surrounded by a firm, golden crust exterior. 

With fresh lemon, lemon zest for brightness in the crumb, (and yogurt, of course!), we add another dimension of deliciousness with fresh blueberries, and top with delicious, blueberry infused Labneh icing. Sweet, tart, thick and yes- probiotic-packed, the labneh is a just-right complement to the texture and flavor of the cake. 

We use Carolina Ground flour, a boutique mill dedicated to local, cold stone-milled grains that make a difference in every bite- you will see, the evidence is in cake!
